Vanilla Pudding Snack Packs

In keeping with my Do It Yourself and not purchasing to many processed foods, I found a recipe for homemade vanilla pudding on allrecipes.com.  They are a great inspiration for all kinds of recipes.

Here are the ingredients:

0022 cups milk

1/2 cup white sugar

3 tablespoons cornstarch

1/4 teaspoon salt

1 teaspoon vanilla extract

1 tablespoon butter

Directions: In a medium saucepan over medium heat, heat milk until bubbles form at the edge like this:

In a bowl combine the sugar, cornstarch and salt.  Pour into the hot milk, a little at a time, stirring to dissolve.  Continue to cook and stir until mixture thickens enough to coat the back of a metal spoon. Do not boil.

004Remove from heat, stir in vanilla and butter.

005I purchased these small rubber maid dishes with screw on lids so as to avoid spills in the lunch box.

006I put the pudding into the cups (it made 5 small servings) and put them in the refrigerator until set.    Then I put the lids on and put them back in the refrigerator and they are ready to pack into lunches.

My son already ate one and gave it a thumbs up.
