Chicken Fried Rice – Super Easy

For dinner tonight I made Chicken Fried Rice.  It is so easy to make and is a family favorite of ours and a recipe my Mom came up with for a speedy, yet healthy meal.

Ingredients:

2 chicken breasts – cut into cubes

1 bag of frozen rice with vegetables (I purchased mine at Trader Joes but you can also use the 90 second rice bags and add a bit of frozen corn or other veggie of your choice)

1 garlic clove

1/4 teaspoon ginger (chopped or grated)

1/2 tablespoon canola oil

1 egg

Asian Spice Mix

1/4 teaspoon sesame seeds

Salt and Pepper to taste

010I started by heating the oil in a large skillet and then added the cubed chicken, minced garlic and the ginger.  Cook until the chicken is no longer pink – about 7 – 10 minutes.

Once the chicken is cooked, add the frozen rice and the spices and continue to cook until the rice is done.

013To add the egg, I beat it in a cup with a bit of water.  I then move the rice/chicken mixture to one side of the pan and put the egg in the other.

Scramble the egg and when cooked through, mix the egg into the rice/chicken mixture until well mixed.

Serve with a nice green salad and dinner is served. Enjoy!
