Crockpot Beef Goulash and a Freezer Meal

This recipe is from Gypsy Melting Pot.  It is not only for the crock pot, but you can make a freezer meal by placing all ingredients in a Gallon Ziplock bag and freeze for later use.

1/2 green bell pepper

1 chopped onion

2 carrots, chopped

1 1/2 pounds of beef stew meat

1 – 6 ounce can of tomato paste

2 teaspoons of Paprika

1/4 teaspoon black pepper

salt to taste

001Spray a crock pot with cooking spray and place all of the ingredients in the crock pot.  Stir to combine.  (I had a bit of chopped cilantro left and put that in the crock pot as well)

003Cook on low for 8 hours or on high for 4 hours.  Add 1/2 cup sour cream about 10 minutes before serving.  Serve over egg noodles or pasta of your choice.

I also placed the same ingredients (minus the sour cream of course) in a ziplock bag and wrote the instructions for cooking on the bag.  I put this bag in the freezer for a day when I am in a hurry to get dinner going.  I love easy!
