Gluten Free Bacon Mac n’ Cheese

Hello – you had me at bacon!!!!!  Who would not enjoy a recipe that contains bacon!?!?

This recipe is awesome and I have made it several times.  My son did not even know that the noodles were gluten free (that is a BIG plus)!!!!  I found this recipe as I was watching You Tube Vlogger Ingrid Nilsen links to her videos can be found here – just search under Bacon Mac n Cheese but I will also write out the recipe below.

Ingredients:

1 cup cottage cheese (whole fat)

2 cups milk

1 tsp. dry mustard (I never seem to have this on hand so I just used 1/2 tsp regular mustard

Pinch of cayenne pepper

1/2 tsp. salt

Pinch of nutmeg

1/4 tsp. black pepper

1 lb sharp shredded cheddar cheese

1 16oz package of gluten free elbow pasta

4-5 slices of bacon cut up and fried

Preheat oven to 375 degrees.  Grease a baking dish (generously) with cooking spray.  Cook bacon and set aside on a paper towel to drain. (I find that cutting the bacon before frying it up works best) In a blender mix together: cottage cheese, milk, mustard, cayenne, nutmeg, salt & pepper.

Put the uncooked pasta in a large bowl, pour in the milk mixture, bacon and add all but 1/4 cup of the shredded cheese.  Stir with a large spoon until well combined.

Pour into prepared baking dish, cover with foil and bake for 3o minutes.

After 30 minutes, remove foil – give it a good stir.  Dot with about 1 tablespoon of butter and add the remaining 1/4 cup of shredded cheese.  Bake uncovered for about another 15 minutes until golden brown and noodles are done to your liking.

This dish has turned out to be such a favorite that I was unable to snap a photo of the finished dish before the boys dug in – so here is what is left….
