This was on the menu tonight and in the words of the boy – “Why don’t we have this more often?” It was delicious and the recipe came from the Pampered Chef 29 minutes to dinner cookbook.
1 lb lean ground beef
1 tbsp. taco seasoning
1/4 tsp salt
1 can (10oz enchilada sauce)
3/4 cup water
1/2 cup medium thick salsa
12 (6 inch) corn tortillas
1/4 cup snipped, fresh cilantro
1 cup shredded Mexican cheese blend
Combine beef, taco seasoning, and salt in a skillet. Cook over medium-high heat until beef is no longer pink. Add enchilada sauce, water and salsa to skillet. Bring to a simmer and remove from heat.
2. As beef mixture cooks, place tortillas in stack and cut into 1 in strips using a pizza cutter or sharp knife. Snip cilantro into small pieces.
3. Place a little meat/sauce mixture (just enough to coat the bottom) in a baking pan, top with half of the tortilla strips, half of the remaining meat/sauce mix, half the cheese, and sprinkle 2 tbsp. of the cilantro over the cheese. Add the rest of the tortilla strips, the remaining meat/sauce mix, the remaining cheese and the remaining cilantro.

4. You can then microwave on high for 3-5 minutes or until cheese is melted. I baked this in the oven at 400 for about 15 minutes.
Serve with sour cream and lime wedges. Enjoy!!!!!
