I made these easy pan fried potatoes for dinner tonight and thought I would share the recipe with you. The nice thing about this recipe is that you do not have to cook the potatoes first, as long as you slice them very thin they will cook up in no time.
1 small bag fingerling potatoes
1/2 small onion – chopped
2 slices of chopped bacon
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1 teaspoon dried parsley (or fresh if you have it)
salt and pepper to taste
I started by frying up the sliced bacon. Once it was cooked, I moved it to a plate lined with paper towels. There is not a lot of grease left after two slices so I left the grease in the pan as my oil base, and started to sauté the chopped onion while I sliced up the potatoes.
The photo on the right is to show how thin I sliced the potatoes. A sharp knife is key in this process. Once all the potatoes are sliced, dump them in the pan, add the spices and cook on medium heat until done. Use a large fry pan so you can get the potatoes in one even layer if possible. Turn them multiple times during the cooking process to ensure even cooking. Mine took about 25 minutes.
Hope you enjoy them! They are super good as a breakfast item as well.
