Weekly Menu for the Week of July 11 – July 15

I hope you all had a wonderful 4th of July Holiday.  We had the traditional BBQ followed by a nice fireworks display.  It was nice having a short work week as well.  Now that my freezer has been cleaned out – you can read about that here – my menu plan and grocery list came together quit nicely.

Here is my menu plan for the week:

Monday: Ravioli with fresh sautéed mushrooms and sundried tomatoes (I will use Gluten Free Pasta for my portion)

Tuesday: Italian Meatballs with spicy marinara sauce (never got to this recipe last week )

Wednesday: Oven Baked Tacos (this is such a great recipe – I have made this with chicken and with ground beef)

Thursday: Chicken Quesadillas

Friday: Meatloaf, baby potatoes, cucumber salad
