Pesto Pasta – Gluten Free

Last night for dinner I made Pesto Pasta with chicken.  I used gluten free penne pasta and the pesto sauce was homemade.  In addition to being homemade, it was home grown.  I used the basil from my basil plant.


Easy Pesto:

1 1/2 cups basil leaves

1/4 cup olive oil

1 garlic clove minced

2 tablespoons pine nuts

1 teaspoon parmesan cheese

Wash the basil leaves and put them in a food processor or blender.

baseilAdd the garlic, pine nuts and parmesan. Place the lid on – turn on the food processor  and slowly drizzle in the olive oil.  You may need more or less oil depending on the consistency you like.

When thoroughly combined, your pesto should look like this:

pestoOnce your pasta is cooked, drain it well and toss in the pesto sauce.  The pasta is warm so no need to heat up the pesto sauce – it will adhere nicely to the pasta.  You can add a few more pine nuts, which is what I did and more parmesan if you like.

The dish is fine to enjoy as is, or you can add chicken.  I sliced up a few chicken breasts, topped with Italian seasoning and sautéed them in a fry pan.  When dinner was served, we added as much chicken as we wanted to our pasta.

        Sorry, Margareta, I misunderstood. I thought you had made the gluten free penne at home and that I had missed the post with your recipe for that. Now I see that it was the sauce that was homemade. Thanks again for this pesto recipe. xo

        I used the gluten free penned and tossed it in the pesto. Sorry it was confusing. Enjoy! We had the speedy jambalaya tonight. Also very tasty.
