We are continuing dinner on the lighter side and today we had a Greek inspired salad. The great thing about salads is you can load them up with all kinds of veggies and dress them to your likeing. I made a yogurt dressing which tastes very good on cucumber salad as well.
For the salad:
Romain Letttuce
Baby Carrots
Cucumber
Cherry Tomatoes
Bell Peppers
Jicama
Kalamata Olives
Pepperocinis
Marinated Artichoke Hearts
Green Onions
BBQ Chicken Breast
Feta Cheese – crumbled
The Dressing:
Small container greek yogurt
Vinegar to taste
salt & pepper to taste
1/4 tsp garlic seasoning
1/8 tsp onion salt
1/4 tsp dried parsley
Mix all ingredients together in a small bowl with a fork or wisk. This dressing can be quite thick so you can thin it a bit with water to get it to the consistency you like. Just note that if you do add the water may have to add a bit more vinegar so the dressing does not taste to watered down.
