I am always looking for creative ways to use my crockpot and this meal worked out great! I used beef stew meat that I cooked in the crockpot and shredded when I got home. The quesadillas were cooked up in no time and dinner was on the table in less than 30 minutes.
1 pound beef stew meat
1 cup beef broth
1 tbsp taco seasoning
1/4 cup salsa of your choice
1 tsp cumin
8 tortillas (I used a gluten free tortilla for mine)
1 1/2 cup shredded cheese
2 jalapenos – sliced
Place the beef, broth, taco seasoning, salsa and cumin in the crockpot. Cook on low for 7 – 8 hours. Once cooked, remove the meat from the crockpot with a slotted spoon. Try to drain as much of the juices as possible. I transferred my meat to a plate where it was then easy to shred.
Preheat a fry pan on medium heat. Place one tortilla in the pan. Cover with about 1/2 cup of the shredded beef. Add a bit of the sliced jalapeno and about a 1/2 – 3/4 cup of shredded cheese. (more or less depending on how cheesy you like it) Cover with the second tortilla. Cook on medium heat until the cheese starts to melt and the tortilla begins to toast. Flip the tortilla and cook on the second side to toast it as well. Continue in this manner until all the quesadillas have been prepared. Makes 4 Quesadillas
Serve with sour cream and additional salsa. Maybe even enjoy a Margarita!
